HOW TO MAKE DANDELION HONEY

PictureDandelion gathered, washed and ready for boiling with lemon and orange slices inside.
INGREDIENTS:
300 Dandelion Blossoms
1 liter of water
1 kg of  brown sugar
1 orange
1 lemon
Clean Cloth for draining

PictureBoiling and straining process before adding sugar.
METHOD:
1) Gather the flowers and wash them to remove any dirt or bugs. 
2) Add the liter of water to the flowers in a pot. 
3) Slice both the lemon and orange and Place on top of the flowers in pot. 
4) Bring to a boil then reduce the heat and let it simmer for half an hour. 
5) Turn off the stove and remove from the heat. Let it rest for 6 hours minimum. 
You can leave overnight if you prefer but you must remember if you live in the warm climate you may want to stick to the 6 hours. 
6) Strain liquid over your cloth and squeeze out as much of the liquid as possible. At this point you can discard the flowers and lemon and orange.

7) Place the sugar in a pot with the dandelion liquid and boil slowly on low heat. 
Boil for 2-3 hours until the mixture has darkened and has thickened. 
Please remember to check the consistency of the liquid after every hour. 
You do this by taking some in a spoon and leaving it on a plate to cool. Always remember that the cooler liquid will be thicker than the hot one. If you boil the liquid for longer it will become thicker.

​This recipe helps with coughs and sore throats. 

It also helps with liver detox.

NUTRITIOUS GLUTEN PROTEIN TREAT

This treat is made primarily using gluten flour which is the protein derived from flour. It also makes use of cashew nuts, nutritional yeast and a blend of seasonings which can be used to replicate flavors similar to the traditional sausage. It is way better than hot dogs however since it is free from all the dangerous ingredients found therein and is totally healthy for the body while enjoyable to the palate, depending on the taste preference. Try it if you have the ingredients and enjoy a nutritious gluten protein treat.

INGREDIENTS:
1 1/2 Cups water
3/4 Cup Raw Cashews
1/2 Cup Nutritional Yeast flakes
2 Tsp. Sea Salt
2 Tsp. Onion Powder
2 Tsp. Garlic Powder
1 Tbsp. Paprika
1/4 Tsp. Celery
1/4 Tsp. Marjoram
2 Tsp. Oregano
1 Tbs. Soy sauce (unfermented)
1 1/2 Tbs. Brown Sugar
5 Tbs. Tomato Sauce
A dash of cayenne pepper (optional)
2 1/4 Cups Gluten Flour
2 Tbsp. Whole Wheat Flour

PictureVegan treat ready for the oven, bake for 35-40 minutes. Cover with parchment paper and another pan to keep in moisture.
DIRECTIONS:
1. Wash Cashews well.
2. Blend all ingredients, except the Gluten and Whole Wheat flour, until smooth.
3. Taste your mixture and add seasonings according to your taste. 
4. In a separate container mix Gluten Flour and Whole Wheat flour together.
5. Add blended liquid to the flour mix in step 4 and using your hands combine well.
6. Using a 2 Tbsp sized scoop, take from gluten mixture and form into cylindrical shape of about 51/2 inches long. Use your cutting board with a little oil on it to help you roll them out.
7. Place in greased pan and cover with parchment paper and another cover to let steam.
8. Bake for 35-40 minutes.

In Vegan cooking seasoning is everything. You must determine what you want and what you like in terms of flavor. Seek good balance of seasonings and cook with love (God is love 1 John 4:8) in your heart always. Enjoy!

VEGAN CASHEW CHEESE (SLICE)

The following recipe is easy, tasty and healthy. If you can find the necessary ingredients try it for a great cheese recipe that is completely vegan and slices very well.

INGREDIENTS:
1 1/2 Cup water
4 Tbsp. Agar Agar flakes (or powder 3 Tbsp.)
1 Cup additional water
1 Cup Raw Cashews
1/2 Cup Red bell pepper
2 Tsp. Paprika
2 3/4 Tsp. Sea Salt
2 Tsp. Onion powder
2 Tsp. Garlic Podwer
6 Tbsp. Nutritional Yeast
2 Tbsp. Lime/Lemon Juice
1 small dash Cayenne pepper (optional)

DIRECTIONS:
1.Bring water to a boil, pour in Agar Agar and whisk quickly until it is melted and thick. Turn off stove and allow to thicken.
2. Blend all other ingredients in a high speed blender. (Ensure you wash raw cashews well).
3. Add thickened agar agar mixture and blend again until combined.
4. Pour into containers lined with plastic cling wrap.
5. Place into refrigerator for 1 hour to set/firm up.

  • NOTES:
-Nutritional yeast helps to give that cheesy flavor, so taste your mixture and add or subtract according to your liking.

-Agar Agar is your vegan version of a type of gelatin, from a type of algae.  thickens quite easily, so be careful not to leave it too long before combining with the rest of the mixture. If you have Agar Agar flakes or strips you may grind in high speed blender to bring to as fine a powder as possible.
- Adjust recipe according to your taste and preference in cheese (salty, tangy etc content). (Some add liquid smoke for smokey cheese flavor).

-This cheese slices easily and can be enjoyed on crackers, with your bread or even grated for use on your vegan pizza. It must be kept in the fridge. THE SILVER BULLET WORKS...A MUST HAVE IN YOUR FAMILY

​According to Merriam-Webster Dictionary (5th ed.). Springfield, Massachusetts: Merriam-Webster Incorporated. 1994, a bullet is a component of firearm ammunition and is the projectile expelled from the firearm's barrel. The term is from Middle French and originated as the diminutive of the word boulle (boullet), which means "small ball".
Although by no means advocating violence, I find this description fitting for the amazing immune builder and killer of many viruses, bacteria, fungi and such like, known as colloidal silver or nano silver. It is the "small" or 'nano' size silver particle suspended in water which destroys the enemies of many elements causing sickness today.

When our church first learnt about Colloidal silver, through talks by our minister Br. Nyron Medina, I was very grateful because the world was talking about the threat of Ebola which killed many, especially in African Countries, in recent times. Also, other hemorrhagic fever viruses such as Chikungunya virus (ChikV) and Zika virus (ZikV) came on stream and many were suffering terribly from them. I read a lot about them and helped discover many facts which were important for us to understand as Health Reformers in our church-facts such as the fact that ChikV was developed as a bioweapon and that the United States Department of Defense had studied and found that nano sized particles of silver was successful in stopping the replication of these viruses in the human cell. This finding was eventually declassified and made available in the public domain. It also proved that Silver could kill Marbug and HIV viruses too. It became obvious to me that my family would have to ensure we had this health ammunition against the many created viruses and diseases in our world in these last and perilous times. In this short piece I wish to share my experiences with colloidal silver usage in two areas: To fight the flu and to address eye infections. A friend's experience with its usage against tonsilitis is also included.

​1. Quick healing from flu symptoms.
One of the key things when using colloidal silver is to understand the difference in necessary protocol as an immune builder as opposed to after the onset of an infection. If you are using it to protect from infection, to build your immune system, then a teaspoon three times a day may suffice. For this purpose we keep it in a spray bottle and take it with us when we move about in society. About 10 sprays in the mouth (at any one given point in time) and held under the tongue for a minute or so before swallowing is effective.  
However, if you already have symptoms of an infection, you need to take this same silver solution more often until the symptoms go. I remember well how horrible I was beginning to feel and knew that some virus was affecting me. I was out of silver and went straightway to the store to get some. I started taking 2 tablespoons from about 3:00 pm (15:00hrs) that evening. At that time I had a fever, headache, tired eyes and that feeling like your whole body is about to crash. I knew it was some sort of flu.
I knew I would need about two tablespoons every hour or two hours for the rest of the evening into the next day and for as long as it would take so I bought more than one bottles. Following this protocol into the night, I even took it whenever I would awake during the night to use the bathroom. I felt my body fight and knew by about 11pm that I had passed the worst. By about 9am the next day I was 90% better and I could not believe it. I was almost through the bottles we bought, especially since my husband was using it as well to ensure he did not contract the same virus I was fighting to get rid of, but it was more than worth it! I was relieved and told the story over and over.

2. Killed my Eye Infection (bacteria) over 2 days.
I had a heavy feeling in my eye and could feel pain when I blinked. It reminded me of the beginning of a stye inside my eye. I knew it was infected and when I examined it in the mirror I could see the extra redness,  a bit of swelling and the appearance of a pimple like, which was very painful. I decided to use silver in my eye because from my reading it was beneficial for that also. My method including simply spraying the silver in the affected eye as often as I felt I needed to. By the end of one day I had done it several times. The silver burned, naturally I believe and it was not so different from using an eye drop as I recalled. The difference was it did not leave my eye feeling dry in any way, just stinging for a while and then subsided.
On day two I still had the infection but persisted with the silver, determined to use it for as long as was necessary. I had a presentation to make on day three and did not want to have a swollen eye. By day three I was normal and had almost forgot that I had pain in the eye just a day before. The pain was visibly gone and I kept batting my eyelids, searching for the pain which was no longer there. The eye had also cleared up and the pimple was gone. It seemed so miraculous. 
A little over a month later I experienced a similar problem and instantly knew what to do and true to form it took only two days of several sprays in the eye for me to see complete recovery. I advise if your spray bottle is strong to pour out some in the cover and drop in the eye. An infected eye is extra sensitive and even a spray can seem harsh on it. (I know I went through that with a different spray bottle). You can also use a dropper instrument if you have one.

3. Tonsilitis and Sorethroat healer
A facebook friend complained in a post about a terrible throat problem she had which left her unable to eat. She expressed her suffering and I entered into her feelings and inboxed her. the conversation went something like this:

MY VEGAN CHEESE SAUCES

I recently shared this on a caribbean food page on facebook. I share it here with you all.
​The following recipes are for two cheese sauces I normally make for use on foods such as baked potatoes, lasagne, macaroni pie and pizza. The original recipe is not mine but I have adjusted it according to my liking and to incorporate locally grown and made ingredients such as homemade coconut oil and sea salt picked from the salt pond in Union Island in my multi-island state St. Vincent and the Grenadines.






​​RECIPE#1- NACHO CHEESE SAUCE
Ingredients:
- 2 potatoes,
- 1 carrot,
- 2 tbsp nutritional yeast,
- 2 tbsp coconut oil (or olive oil)
- Juice of half a lime - garlic powder, sea salt, paprika to taste -Cayenne pepper (optional)

Method:
  1. Boil potatoes and carrot until soft, cool and place in blender
  2. Add all other ingredients. Please note that in my adjusted recipe I have added 1/4-1/2 cup creamy coconut milk.
  3. Blend everything together until thick, smooth consistency.
  4. Use in your baked pies, potatoes, eggplants, on pizzas etc.
*You may adjust (by increasing) the amount of nutritional yeast if you want a more cheesy taste. When this cheese sits overnight in the refrigerator it firms up a bit more and seasonings, having soaked in well, give a great nacho cheese taste for dip for chips etc. It also has a tendency to firm up when baked in and have a melt-y look and feel accordingly.

RECIPE#2-EASY CHEESE SAUCE

Ingredients: - 1 tbsp coconut oil
- 1 tbsp whole wheat flour
- 1 cup coconut milk -
2 tsp nutritional yeast -
Dash garlic powder, sea salt, cayenne pepper.

Method:
  1. Make a roux in a heated pan by melting flour into oil.
  2. Add other ingredients
  3. Keep stirring until it thickens
  4. Add more ingredients to adjust recipe according to the amount you desire.
  5. Use in lasagne, pies etc..
*More nutritional yeast will make this sauce more yellow in color. Otherwise it will be more of a white sauce. Other plant milk options may be used (soy, almond...) but not too thin.

NOTE- Vegan food is healthy, nutritious and just as tasty as foods you were accustomed to with flesh in it. I find that the tastiness of these cheese sauces, to vegans and non-vegans alike, is proof f the fact that seasonings make all the difference. So if you liked cheese and are changing over to veganism, you can still replicate the cheesy taste from highly nutritious nutritional yeast and these other ingredients prepared correctly. Even you will be surprised. Just try it!

DISCOVERING PURPLE SWEET POTATO

My upstairs neighbor recently asked my husband to help him dig some sweet potatoes he had planted in our yard. I never expected to see this bright reddish-purplish sweet potatoes for the first time in my life. Not only was it my first time beholding this plant food but I was amazed at the rich color thereof. Apart from looking forward to eating it, I wanted to know its health benefits and was I surprised at my discovery! Called Okinawan sweet potato because of its popularity in Japan, this purple tuber has been scientifically proven to prevent cancer, to be rich in antioxidants and comparably stronger than its white and orange cousin variety in these respects.

We have since steamed it, fried it and even mashed it and I am hungry for more as I discover its rich health benefits. The taste is similar to the white sweet potato but I find its texture rather soft and melting in the mouth. If you can find it near you, you should definitely include it into your diet. If you grow it, better still.

So What's in a purple sweet potato?

The antioxidant known as anthocyanin is the pigment which is responsible for the brilliant purple color of the flesh. Amazing huh? As you may know antioxidants fights against free radicals which cause cancer. They are also good for cardiovascular (heart related) health.

Scientists have even gone as far as to extract the anthocyanin antioxidant from the purple sweet potato and sought to create what they call an 'anthocyanin enriched purple sweet potato' variety which they have tested and found has preventative powers in treating Colorectal cancer (colon and rectum cancer).  Well prepared Gluten – A Vegan Delight

The use of gluten, prepared in a variety of ways, is very common among vegans. It can be fried, baked or stewed. Gluten is described as a family of proteins found in grains like wheat, rye, and barley. Some persons may be gluten- intolerant. These persons may therefore choose an alternative ‘meat substitute.’

Ingredients
  • Flour
  • Water
  • Sea salt
  • Soya sauce
  • Broad leaf thyme(‘Tiki’ thyme)
  • Chive
  • Garlic
  • Ginger
  • Fine leaf thyme
  • sage
 
Preparation                                 
  • Knead about 5lbs of flour in a large container and leave overnight for best result.
  • Wash under running water until clear (until all starch is washed out) and gluten remains.
  • Put the gluten in a large pot of boiling water with sea salt and lots  of seasoning for about 45 minutes until firm.
  • Put some soya sauce (if desired) and fresh blended seasoning on gluten.
  • Leave to cool.
  • Then, slice to suit for frying, baking or stewing.
 
N.B. For frying, the slices can be coated with well-seasoned (garlic powder, onion powder, celery, cayenne pepper etc.) whole wheat flour.
