MY VEGAN CHEESE SAUCES

I recently shared this on a caribbean food page on facebook. I share it here with you all.
​The following recipes are for two cheese sauces I normally make for use on foods such as baked potatoes, lasagne, macaroni pie and pizza. The original recipe is not mine but I have adjusted it according to my liking and to incorporate locally grown and made ingredients such as homemade coconut oil and sea salt picked from the salt pond in Union Island in my multi-island state St. Vincent and the Grenadines.






​​RECIPE#1- NACHO CHEESE SAUCE
Ingredients:
- 2 potatoes,
- 1 carrot,
- 2 tbsp nutritional yeast,
- 2 tbsp coconut oil (or olive oil)
- Juice of half a lime - garlic powder, sea salt, paprika to taste -Cayenne pepper (optional)

Method:
  1. Boil potatoes and carrot until soft, cool and place in blender
  2. Add all other ingredients. Please note that in my adjusted recipe I have added 1/4-1/2 cup creamy coconut milk.
  3. Blend everything together until thick, smooth consistency.
  4. Use in your baked pies, potatoes, eggplants, on pizzas etc.
*You may adjust (by increasing) the amount of nutritional yeast if you want a more cheesy taste. When this cheese sits overnight in the refrigerator it firms up a bit more and seasonings, having soaked in well, give a great nacho cheese taste for dip for chips etc. It also has a tendency to firm up when baked in and have a melt-y look and feel accordingly.

RECIPE#2-EASY CHEESE SAUCE

Ingredients: - 1 tbsp coconut oil
- 1 tbsp whole wheat flour
- 1 cup coconut milk -
2 tsp nutritional yeast -
Dash garlic powder, sea salt, cayenne pepper.

Method:
  1. Make a roux in a heated pan by melting flour into oil.
  2. Add other ingredients
  3. Keep stirring until it thickens
  4. Add more ingredients to adjust recipe according to the amount you desire.
  5. Use in lasagne, pies etc..
*More nutritional yeast will make this sauce more yellow in color. Otherwise it will be more of a white sauce. Other plant milk options may be used (soy, almond...) but not too thin.

NOTE- Vegan food is healthy, nutritious and just as tasty as foods you were accustomed to with flesh in it. I find that the tastiness of these cheese sauces, to vegans and non-vegans alike, is proof f the fact that seasonings make all the difference. So if you liked cheese and are changing over to veganism, you can still replicate the cheesy taste from highly nutritious nutritional yeast and these other ingredients prepared correctly. Even you will be surprised. Just try it!
