DISCOVERING PURPLE SWEET POTATOMy upstairs neighbor recently asked my husband to help him dig some sweet potatoes he had planted in our yard. I never expected to see this bright reddish-purplish sweet potatoes for the first time in my life. Not only was it my first time beholding this plant food but I was amazed at the rich color thereof. Apart from looking forward to eating it, I wanted to know its health benefits and was I surprised at my discovery! Called Okinawan sweet potato because of its popularity in Japan, this purple tuber has been scientifically proven to prevent cancer, to be rich in antioxidants and comparably stronger than its white and orange cousin variety in these respects. We have since steamed it, fried it and even mashed it and I am hungry for more as I discover its rich health benefits. The taste is similar to the white sweet potato but I find its texture rather soft and melting in the mouth. If you can find it near you, you should definitely include it into your diet. If you grow it, better still. So What's in a purple sweet potato? Well according to www.downtoearth.org it is a "power purplehouse of nutrition". "The primary nutritional benefit, and the one for which Okinawan sweet potatoes are especially prized, is their high antioxidant levels. The antioxidant known as anthocyanin is the pigment which is responsible for the brilliant purple color of the flesh. It is the same pigment that gives blueberries, red grapes and red cabbage their color. Amazing huh? As you may know antioxidants fights against free radicals which cause cancer. They are also good for cardiovascular (heart related) health. Scientists have even gone as far as to extract the anthocyanin antioxidant from the purple sweet potato and sought to create what they call an 'anthocyanin enriched purple sweet potato' variety which they have tested and found has preventative powers in treating Colorectal cancer (colon and rectum cancer).
