1. Tofu Mayonnaise
“Whether therefore ye eat, or drink, or whatsoever ye do, do all to the glory of God.” 1 Corinthians 10:32.
Mayonnaise bought in the supermarket is laden with oil, vinegar eggs and thickener. As a vegan you can still have the delicious taste of mayonnaise in a healthy way to add that unique taste to your sandwich or salad by making your own using simple but healthy ingredients.
Our main ingredient is Tofu.  It is a very versatile product that is made from the Soybean. It is an excellent source of amino acids, iron, calcium and other micro-nutrients, which have many health benefits.

To make our Tofu mayonnaise you will need the following
a. A blender or food processor
b. A spatula

Ingredients
6. oz. of soft tofu drained
11/2 tsp. lemon juice
2 Tsp. coconut or vegetable oil
½ tsp. of sea salt
Sugar to taste

Method
Blend all ingredients in blender pausing to scrape down the sides of the blender with your spatula. Blend again until it becomes smooth and cream.
You can spice it up with Pimiento pepper, garlic or ginger.  Use your delicious homemade mayonnaise on sandwiches, as a French dressing or on coleslaw.  You can Store for up to two weeks in an air-tight container in the refrigerator.

2.  
SCRAMBLED TOFU
Replaces scrambled eggs; saves from bad cholesterol.
 
Main Ingredients
Tofu
Onion
Garlic
Tomatoes
Green Peppers

Sage
Coconut oil
Sea salt
Cayenne pepper
Saffron powder or grated saffron (Tumeric)
(All portions can be estimated similar to a scrambled egg recipe)
 
Method
  • Crush tofu with a fork
  • Sauté onion, garlic, tomatoes, green peppers and sage in coconut oil( add any other seasoning of choice)
  • Add crushed tofu to the mixture in frying pan on medium fire
  • Add saffron powder or grated saffron for yellow color
  • Add salt and cayenne pepper to taste
  • Make sure salt and saffron are well distributed (stirred in)
  • Leave on fire for about 5 minutes
  • A bit of olive oil and onion/garlic power can be sprinkled on the top
  • Leave to cool, then serve.

3. CORN MEAL HERBED TOFU STRIPS

Ingredients
I block firm tofu
1tsp salt
I tsp cayenne pepper
2tsp basil
1tsp thyme
I tsp onion powder
1tsp paprika
Three quarter cup cornmeal
Coconut oil for frying.


Method
Wash tofu and evenly slice diagonally
Add salt to tofu
Incorporate other herbs & spices into cornmeal
Then coat tofu with cornmeal mixture
Then fry in hot oil, in a wide enough pan until golden brown on both sides
After frying place in paper towel and let excess oil drain
Then cut evenly into strips.
A sauce may be prepared to accompany it

4. STIR FRIED TOFU WITH SPINACH
A breakfast or light dinner snack

Main Ingredients
Tofu (1 block firm)
Spinach
Coconut oil
Sea salt
Onion
Garlic
Oregano (and any other seasoning you like)
Tumeric/Saffron powder
Cayenne pepper
(Use amounts to taste)

 
Method:
  1. Dice tofu into small cubes (as seen in photo), dry and season with salt and pepper
  2. Fry tofu lightly in coconut oil until you see a light golden brown color then remove from heat and place on paper towel to drain.
  3. Stir fry spinach in onion and other seasonings until wilted
  4. Add tofu to spinach stir fry and stir into the mix
  5. Add tumeric/saffron power for color
  6. Serve with salads and toast
This recipe can be used at breakfast as well as a light snack for dinner. Salads in photo are grated green pawpaw slaw and green salad with nuts and cranberries.

It is indeed wonderful to see these recipes and look forward to many more to come. We can now see how to cook healthy vegan dishes for our families and also show people that a vagan diet can indeed be versatile,exciting and tasty.... Bon appetite every one
